That's about the best use of an orange I've ever read about.

Y'know, I might just buy an orange on the way home.

No idea why I don;t eat them. maybe it's a texural thing.

I use oranges in cooking quite a lot. Do a lovely sea bass in orange with chilli vermicelli noodles which is nice. Mediterranean lamb is also lush.

The science of it?

Same as any other acid, deglazes the pan to get all that sweet caramelized flavour.

Plus the taste of orange.. Rather than vinegar/lemon/wine

Mediterranean Lamb is brilliant and the citrus tenderises the meat. Stick garlic under the skin and then place lemon and orange slices all over and add some mint and paprika at your discretion.

Easy to prepare, baste it to stop it drying but the lemon and orange help with that.

Sounds like a nice easy midweek dinner Sounds awesome though.

Chicken Cordon Blue for us tonight.

Had some wine, cheese, bread and prosciutto the other night, so used the leftover prosciutto to make the chicken.

All rolled up and ready to pop in the oven later

Yeah they're lush. Get sea bass fillet and cut into strips. Marinade in orange juice and fresh red chilli then bake for 4 mins under the grill.
