I have been thinking about this for a long time but still haven't managed to find an appropriate answer.
I have seen many people indulge in this. Even renowned players like Rooney, Michael Owen, Joey Barton.
It sounds trivial and I don't intend to be some sort of a natzi or something but I see this phenomenon everywhere. Even on this forum.
The question is - "Why do people say COULD OF/ WOULD OF/ SHOULD OF instead of COULD HAVE/ WOULD HAVE/ SHOULD HAVE

it's probably written like that because saying "could have" is essentially pronounced "could-uh've" (stress on the UH sound) or "could've".
So firstly, it sounds more like 'of' than 'have' when spoken - unless you clearly enunciate the 'H' - which could cause confusion. Secondly, who cares?
