How much of your own head could you eat till you died?

I reckon most of it with the appropriate medical care and life-support. Lips, outward-most tongue, vital brain parts and jaw bones would probably have to be the last to go. Think the lower tongue would be necessary for adequate deglutition unless the passage could be kept artificially open. Interesting question though.

I'd start with liver with some fava beans and a nice chianti.

I don't think any of that is technically your head.
