Bloody hell. Ironically the hottest thing I ever had I made myself, it had a couple of scotch bonnets in it, very, very overripe ones and it was blisteringly hot. Drank about a gallon of water still didn’t take any edge off it. Not fun at all.

Yeah lager does go really well with a curry. I find that I eat so much when I go out for a curry that I can't stomach any more lager after I've finished eating.
Cup of tea is good too if your mouth is burning from chillies
Curries are getting better and more "authentic" in some areas.
The original BIR were pretty much doing the same dish but adding something to it and calling it a different name.
So dopiaza was a curry with extra fried onion. Jalfrezi was curry with fried onion peppers and tomatoes, vindaloo was curry with a big spoon of chilli thrown in at the end and a piece of potato.
Korma masala and malayan were the same dish with few extras.
Competition and people travelling has made them get better.
A proper vindaloo is a nice dish with vinegar and spice. A proper chicken tikka masala is spicy with cream or yoghurt. Not the sweet dish we see in most restaurants.

I always have lager (and maybe a bit of water) with a curry but that’s because it goes well and I don’t expect to be genuinely struggling. If I were, I’d have milk, but the fact is that you’re probably stuck with the pain for a few minutes whatever you have.

Any family meal we used to book had to be somewhere that served steal and ale pie for her and my Grandad
Got into making BIR style curries since living overseas.
The whole base gravy method. Wanted to replicate a real phaal, ordered mr naga pickle to mix in
Spent the next day on the toilet cramping like I had PMS
Was a great time be alive

Agree on the rest, they do seem to be more authentic dishes popping up. I’ve been to India and there weren’t many dishes that we’d view as Indian here, available there- but it was lovely the food in street resteraunts..
Kingfisher is awful on its own. Cobra meh.
Not really a lager drinker but will happily drink one or the other with a curry

Yeah I've heard the same thing, that curry houses used to have about three base sauce that they added ingredients to in order to make the various curries.
This is outdated now though and more and more restaurants are making each curry individually which is of course much better.

Not necessarily, but it is a gamble.I’ve eaten street food in Asia too without issues, tends to be flash fried in front of you. Didn’t have any issues in India believe it or not.

I spent 6 days in India with work and from day 2 to day 5 I spent every minute of the day planning my fastest route to the toilet

They say it’s safer to eat the street food than it is to eat the food served up in hotels. The buffets are renowned for reheating the same stuff from the day before and probably reheat it for the next day too.

You see it get cooked in super hot pans, right in front of you. It’s stuff that’s been left out that’s the one to watch. That said I had a left out curry in a open air roadside place in Thailand at 3am that was easily top 5 meals I’ve ever had. No idea what it was, even had a fried egg on top?! But it was magnificent, and didn’t make me ill.
Egg with/or in curry is great.
I spent a few nights in Mumbai last year and was constantly worried about getting ill. I didn’t eat any of the cold salad stuff that came with the curry and naan I ordered every night. I was fine and soon regretted not being a bit more adventurous with street food etc. Loads of stalls on Chowpatty Beach that I really fancied.
