That’s the strange thing Ang. There were no knives. She had cut off a few small pieces of cheese from each one (there were dozens and dozens of cheeses), but the pieces were tiny and still had on the rind, so it wasn’t as if I could pop one in my mouth. I didn’t know what to do.

There were no accompaniments Scouse, no crackers, chutneys or grapes. Just masses of cheese. Mainly hard cheeses, a bit like a Jarlsberg I would say, but there were some softer Brie-like ones as well. I think she likes to experiment in her cheesemaking.

How does she put the holes in the Jarlsberg ?

We didn’t really get into that, Ang, though I would like to know. Probably the holes are already there and she builds the cheese around it, I don’t know.

My mum used to make stilton at Hartington Creamery until she retired, (the factory has since been demolished and is now houses)!
