The scene at the end of "The Long Good Friday" where Bob Hoskins is kidnapped by the opposition gang (Pearce Brosnan). Near soiled myself when I first saw it. Hoskins' best movie by far.

Dunno if either of these have been mentioned, but two scenes that immediately spring to mind are the Walken-Hopper "Sicilian" scene in True Romance and the reveal scene in Usual Suspects. The interrogation scene at the start of Scarface is another favourite.
