I tried a go with Man City where I was only allowed English players and coaching staff. It wasn't easy.

I often set myself extra rules to make it harder - no-one over or below a certain age, or only people from one country, or only people already in my league.
Obviously the hardest was no signings at all - that lasted a few seasons before i had to break my own rules and sign a keeper. Bognor Regis Town don't seem to produce good keepers
