The good thing about the prequels is the world building and the stories they created. It also showed the jedi at their peak and what the force could do. You have a new level of respect for certain characters and scenes in the original series, having watched the prequels. One of my favourites is Yoda talking to Luke about his father.

Maul should have stuck around but he was never going to be the villain of the trilogy when you have Anakin and Palpatine.

They could and probably should have kept Darth Maul around until at least the end of the second movie. Maybe even the begining of the third movie. Although admittedly Maul needs to not be around for most of ROTS in order for it to work.
