"I can't be a missionary! I don't even believe in Jebus!"
followed by
"save ms Jebus!"
Never sure of my favourite episode but my favourite moment is the building of the BBQ - "English side ruined, must use French instructions. Le grille, what the hell is that?!" followed by the classic "Why must I fail at every attempt at masonry".
Also the moment when he can't swear whilst building the doghouse
Best quote though...

Classic episode.
when homers looking for the peanut...
homer - "twenty dollars, but i wanted a peanut"
brain - twenty dollars can buy many peanuts...
homer - explain how...
brian - money can be exchanged for goods and service
homer - wohoo!!
theres one where Homers staying up all night I cant mind what for
n hes like
'Marge get the kettle on and make some coffee.....drink it and make me some burgers'
Bart is going on a father son boy scout thing but has fallen out with Homer.
Homers asks him how his day went at pansy boy scouts
Bart "Today we planned the father son raft ride"
Homer " HAHA !!!..... you dont have a son!"
So many of the early episodes are gold. The first ever one was on Ch4 just before Christmas and it's still superb now.
Off the top of my head "Bart gets an F" is excellent and as a kid/teenager it definitely resonated with me as at that age every night I wanted to be out with my friends.
Favourite moment - Homer and the gorge does come to mind. I'll say when they go for family therapy and end up zapping/beating the carp out of each other.
Quote/scene https://m.youtube.com/watch?v=Rj0Tj8dnrYw (typing it out wouldn't do it justice)
If an older episode is on tv I'll still watch it. 1997/1998 is probably my cut off point.
