I haven’t commented on Australia.

you haven't but on the bias of 'western lists' you would expect London, given its size, size of the nations population to be there. just like New York, Toronto, Paris, Berlin etc
I'd say its more impressive smaller nations can make an impact on those lists.

never understood why the Michelin guide became the Bible for food anyway.
it's run by a tyre company. basically started out as a guide to eating on the road.

I’ve travelled round England for holidays or visiting friends and generally the food has been pretty forgettable. I’m not visiting Michelin star restaurants, I mean good variety of cuisines. I’m sure there are some good places but generally (which was my initial point) the food around England isn’t great.
----------------------------------------------------------------------
I take the cuisine you are trying is typically "British" ? Pub food? Take out food? That's probably me generalising but it is no different to your generalisation of British cuisine.
You clearly are not eating at the right places. The quality and diversity of food across the UK is vast now than its ever been.
I think your views of cuisine in the UK is quite outdated. In the 1980s, yes, in 2021? No chance!
This will be a 500 page chit chat about Pep's love for British cuisine!

chicken vindaloo for dinner
nobody makes chip shop chips like we do, and those Bangladeshi fusion things we call Indian curry are beyond unique.

No I mean more the diversity that London offers. In terms of modern British cuisine pretty much any food chef outside of London will have trained in London and then moved out. This area is improving and I’m sure there are some great places around but in general (which is my whole point) the quality of food in the country is poor, largely due to produce, also because of our upbringing and understanding of food. If I’m in a city/town centre and wanna try some interesting diverse good tasting food I’ve generally found it difficult. You might think you’ve found something and the quality is disappointing.

to me its Birmingham or Bradford
ive eaten my fair share in London too but to me Birmingham that is the best in the UK. personal taste of course.
Brick Lane curry is awful, it’s made specifically for tourists who think that’s were you go for an authentic curry. Walk 20 minutes east and you’ll get some proper Pakistani cuisine though.

Manchester, Bradford, London are places to go for proper authentic Indian sub continent cuisine. As people travel, watch YouTube their desire for authentic food grows, establishments around the country grows as a result, still not growing fast enough for me.
You usually find authentic food where there are large pockets of ethnic groups around the country.
Generic curry served up in your typical high street is far from authentic as it gets
