In the OP Robb already mentioned Coming to America (which has to be a GOAT contender). I'd like to give a shout for Trading Places as well. Those two films were peak Murphy.

Burn After Reading isn't great, but worth it for Clooney and Pitt's parodies of their usual roles.
O Brother! I would need to rewatch one day. Back when it was on general release, I hadn't yet read The Odyssey, so I imagine many of the references might have been lost on me.

People don't even rate it as highly as Borat but I think Bruno has some hilarious moments.

I remember watching Bruno on general release sitting next to an elderly couple who really had no idea what they'd let themselves in for. They lasted about 20 minutes.
The medium scene is fantastic. Then there's the casting for the tv show with the baby Hitlers, the motel scene where he and Hans are chained up, the cage fight ... it has plenty of side splitters, but I think the best place to watch it based on experience would be at an old folks home.

I loved True Grit too. Love the strangeness the Coens bring to the familiar territory of the Western, which works because they don't overdo it - generally treat the subject matter quite straight. Also, the climactic scene after the snake bite really reminded me of Night of the Hunter, which is one of my all time favourites.
Not sure there's a great deal of depth added to O Brother from familiarity with the source material. It provides a model for the narrative, but if it provides some meaningful context, that has eluded me. Still quite enjoy it though. "I'm a Dapper Dan man."
As for Lebowksi, I can't think of a single scene of the film that doesn't fill me with joy.
