I think a lot of that comes from health benefits rather than climate change a lot of the time though. Younger generations are much more health conscious with their diets these days. The environmental factor is just a bonus.

I was a vegan for a few months a few years back and it was fairly tolerable but I’ve always kept an eye out on the latest things you can get and tried some of the fast food options and you really can’t tell the difference. Once they make a far more carbon footprint friendly tasty vegan option rather than the fast food outlet version I can see people preferring it, especially as more and more people (the younger generation) are awoken to just how horrific the meat industry is.
You most certainly can tell the difference.
I had a vegetarian southern fried breaded chicken substitute yesterday and genuinely struggled to tell the difference.

There are some amazing meat substitutes out there already.
The biggest problem with them now, IMO, is price, rather than ‘quality’. But given time, there’s no reason why they won’t end up being cheaper than beef, for example.
A simple recipe - Linda McCartney sausages chopped up, bolognese sauce, onions and pasta. Serve that to someone and don’t tell them it’s a veggie option and I guarantee they don’t tell the difference.

You realise that there are now lab-grown proteins that are structurally identical to beef?
The pandemic solved the problem in the transport industry, where people could work from home and do meetings remotely, vastly reducing the need to travel. Now we are being forced to do the opposite purely because bosses are old and hate change so force their ways upon junior staff. They also hate their families and self, so their 2 hour commute each way is a way of escaping their family and then being crammed in with arrsholes in an office helps them distract themselves from themselves, as they hate themselves.
So this all gets forced upon everyone else at the expense of progress in reducing emissions.
They also wouldn't really have a job if they couldn't fly to a one hour meeting once a week.
So to conclude, we solved the problem in one of the key areas in terms of emissions, but then arreholes who got to the top by being arrseholes forced their arssehole ways back on us to the detriment of the planet. Humans are woeful.

We all know these soft drinks aren’t good for you so put massive strains on the NHS, not to mention the waste and emissions to keep a factory pumping out goods 24/7.

Sure, and it goes back to the point above about how you get people to change behaviour. Telling someone it is wrong to eat meat will land on deaf ears... But sell them on the concept that it is healthier and better for the environment and it starts to creep into their mindset.
Most people have an idea that something is a bit off with the way we live, but need a gentle nudge in the right direction. Promoting health is a way.
That said, the mates i speak of are not exactly health conscious. I generally think they are starting to wake up to the fact that their kids/grandkids world needs saving.
